It's What's for Breakfast: Huevos Rancheros

I am becoming quite the creator of yum and kitchen freestylist, let me tell you!  Woke up, got out of bed, dragged a brush across my head.  I LOVE a good Huevos Rancheros, yet very few eateries get it right.  So I decided to use what I had in my kitchen and take a stab at it, the outcome?  Amazing!

You too can create delicious and impress a special someone, or just make it for youself like I did.  All you'll need is the following:
  • Fresh Eggs
  • Black Beans
  • Can of Chipotle Adobo Peppers
  • 1 Jalepeno 
  • 1 Lime
  • Shredded Cheese
  • Corn Tortillas
  • Fresh Garlic
First create your black bean base by combining black beans, diced garlic, 2 squeezed lime wedges, Half a Jalepeno (1/4 for you gringos), and two sliced Chipotle peppers.  Mash in a bowl and heat over the stove for 5 min.

Second, lightly fry your corn tortillas in a pan and prep you sunnyside up eggs.

Thirdly, assemble your marvelous breakfast by placing one corn tortilla on the bottom topped with black bean base and shredded cheese.  Place your second tortilla on top of that, add more black bean base and then place the eggs on top.  So easy my friends and extremely satisfying!

I promise it will make you swoon, if it doesn't?  I will come make you breakfast sometime, win win situation I know!
