Here is one of my favorite summer dishes to make, Bean Salad. It's pretty much the perfect thing to bring on a picnic, to work, and over to a friends house to make their day. It's Vegan too! Until you add something delicious like grilled Salmon, Chicken, Steak, oh I shoulda put some cow on it. Oh well, this is me being healthy dears. Avocado would totally spice this up as well, to continue with the Vegan theme.
This is so easy, just use a blender to make the salsa with these ingredients:
- 5-6 Tomatillo (green tomato)
- 1/2 Red Onion
- 1/2 Clove Garlic
- 1 Bunch Green Onion
- 1 Bunch Cilantro
- 2 fresh juiced Limes
- Pinch of Sugar
- 1 Jalepeno (do 1/2 if you're gringo)
Next choose your favorite canned beans, I'm partial to Black Beans, Pinto, Kidney, and White Beans. Top it with some corn to brighten it up! The more colorful your food is, the more satistfying.
