It's What's for Dinner

An evening alllll to myself is simply wonderful.  So is having an entire Monday off, hitting up the gym, attending to unedited photos, walking Emma on a new route, and getting creative in the kitchen.  Me and my kitchen, boy have we been getting busy lately.  I mean wow, maybe I will go to culinary school as well as nursing school, or just make delicious dishes for the chosen few.  Dinner parties are going to be a thing this summer, I can't wait!

As for this monstrosity of heaven right above, I couldn't help but lightly marinate Salmon in white truffle oil, rosemary, and a dash of basil.  Topped with Shallots... Have you ever caramelized them before?  Sheer candy, that complimented the hell out of the fish my dears!  Then came a spinich base for the greenery, Ashley Chavez's Bruchetta, and I took a stab at my very first balsamic vinegar reduction.

It was extremely successful, minus burning the heck out of my middle finger trying to see if it was sweet enough.  Who knew?  What kind of salads have you been into making as of late?  Will you come to my dinner parties?

Recipe Ingredients
  • Salmon Fillet 
  • Shallots (caramelized in butter & sugar)
  • Spinach
  • Bruchetta (tomato, olive oil, basil, dash salt)
  • white truffle oil
  • Balsamic Vinegar
Begin by rubbing the salmon with a little bit of truffle oil, rosemary, and a smidge of basil.

While that's starting to cook, slice your shallots and place them into a small sauteeing pan with butter & little bit of white sugar.

Prep your salad base next, by placing spinach, or whatever your green leaf of choice is.  Place bruchetta on top.

Now here comes the hardest part, the Balsamic reduction.  Carefully place a good amount of balsamic vinegar in a small pan, over a low burner.  Continuously whisk it as it begins to evaporate and turns sweet.  This will take a good 10min, but is totally worth it, the trick to knowing when its ready is by tasting it.  If its sweet and magical, then you've done it!  Top the salmon with this and you are a true creator of yum.
